We made it through the holidays, and life is returning to normal. I’ve loved all the cookies, appetizers, and creamy casseroles, but I’m ready for a reset, and the new year is a great time to do that. I typically eat lighter fare, eat less of it, and make sure every meal is chock-full of vegetables. And with the kids having to get up early for school and longer days at the office, dinner can sometimes fall by the wayside, and pizza comes into the mix.
To help you avoid that pitfall, I’ve put together a short list of easy (all one hour or less), mostly healthful weeknight dinners to try this month. They’re all seasonally appropriate. There’s no need to be eating a cold salad when it’s 15°F outside and snowing! Let us know if you make any of these, and here’s to a happy and healthy new year.
One of my all-time favorite comfort foods is fried rice. Whenever I make white rice, I make extra so I can use the leftovers for fried rice. This recipe is loaded with veggies, eggs for protein, and a little bacon for flavor. P.S. This works great with brown rice, too.
