Rosewood Hong Kong appoints bar team – The Spirits Business


Marco Maiorano is the new bar manager at DarkSide, the cocktail bar at the Rosewood Hong Kong hotel.
Maiorano’s CV includes stints at London’s Connaught hotel and Scarfes Bar. Most recently, he led the bar programme at Koma at the Marina Bay Sands in Singapore.
He will be supported by assistant bar manager Ian Lui and senior bartender Cynthia Wong, both of whom are returning to their hometown.
Maoirano said: “I’m absolutely delighted to be returning to the Rosewood family, once again, and to have the opportunity to contribute my own mark on a bar as prestigious as DarkSide. It’s a place where history, creativity, and craftsmanship converge, and I’m excited to help shape its next chapter.”
Lui joins the team from Rosewood Bangkok, having previously worked at The Ritz-Carlton in both Hong Kong and the Maldives.
Wong’s career began in Hong Kong and Australia, and she joined the opening team at the former’s Shady Acres. In 2022, she helped to launch Resonance by Heston Blumenthal at Atlantis The Royal in Dubai.
She then moved to London to work at Scarfes Bar. Before returning to Hong Kong, she bartended at Club Bâtard.
Earlier this year, Rosewood transplanted Yann Bouvignies from its London site to Amsterdam to open Advocatuur.
